I love to marinade my meats and fish so that the flavor gets throughout, not just on top of the meat. The other benefit of marinating is it decreases cancer risk. There is some concern (though yet to be proven) that charred meats and fish can increase cancer risk . However, marinades seem to add a protective measure. Double bonus!
When I make this for guests, they always ask for the recipe, which of course, I don’t really have, as it’s in my head. I tried to approximate amounts for you , but of course, it depends on how much marinade you need, and how much fish you have. I like to cook salmon on a cedar plank to impart a smoky flavor.
This is also great for shrimp, just by adding some red pepper flakes and paprika to give a sweet heat.
