My kids love pancakes, and have them most mornings for breakfast. But before you think I am an amazing mom, mixing up pancakes every morning, let me tell you my secret. I make big batches, and freeze them, then they just pop them in the microwave.
Of course, being a nutritionist, I’m a stickler for eating protein in the morning. The cottage cheese in these pancakes gives that protein! (don’t worry, it blends up very smooth) And the oats are a slow digesting carb to give slow-release energy.
