Usually, I love to cook. But some days… not so much. Today was one of those days.
I needed something for dinner that I didn’t really need any skills for, something that I could just dump a bunch of things in a pot, something that involved stuff already in my pantry.
With quinoa and beans, this is a hearty dish, but comes together quickly. Add a salad and you have a high protein, low fat, nutritious dinner on the table faster than you could pick up pizza!
